Chicken drummettes

Chicken drummettes are baked with an apricot nectar sauce, or use another fruit nectar...another great appetizer recipe to try..!

Ingredients:
  • 1 cup apricot nectar
  • 1/4 cup tomato paste
  • 1/4 cup honey
  • 1/2 to 1 whole hot chile pepper, such as serrano or jalapeno, seeds removed, finely minced
  • 2 tablespoons cider vinegar
  • 2 teaspoons Worcestershire sauce
  • 2 cloves garlic, finely minced
  • 1/2 teaspoon salt
  • 2 pounds chicken drummettes, skin removed (about 16)

Preparation:
Heat oven to 375°. In small bowl combine apricot nectar, tomato paste, honey, chile, vinegar, Worcestershire sauce, garlic, and salt. Mix well. Place drummettes in a 13x9-inch baking pan. Pour sauce over chicken. Bake for 45 to 55 minutes, basting with sauce from time to time, until chicken is cooked through. Makes 16 appetizers..The appetizer recipe is ready....enjoy it !

Tomato Toast Recipe


Tomato Toast appetizer recipe...an easy and tasty one !

Ingredients:

* 1 quart of tomatoes
* Salt
* Pepper
* Dash of cayenne
* 1 tablespoon of sugar
* 2 tablespoons butter
* Nutmeg
* 4 slices of wheat bread
* Heavy cream, whipped

Instructions

1. Stew tomatoes and season nicely with salt, pepper, a dash of cayenne, sugar, and butter.
2. A very little nutmeg or mace may be added if liked with a dash of onion juice.
3. Toast thin slices of entire wheat bread to an even, delicate brown; put them on a hot platter and moisten slightly with hot water and melted butter.
4. Cover the toast with the hot tomato. Just before serving, put 1 spoonful of thick, whipped cream on the top of each slice.
5. This is a nice breakfast or lunch dish to serve with a plain omelet and crisp slices of bacon.

Instructions

1. Put eggs into boiling water and let simmer for 20 minutes;then drain and put into cold water.
2. When cold, remove the shells, and split through lengthwise.
3. Mash the yolks through a strainer, and season with finelychopped olives, sweet pepper or chopped pimento and oil and lemonjuice or a little mayonnaise.
4. Refill the whites with the yolk mixture, having them wellrounded, and serve on lettuce leaves.

Shrimp Cocktail

Shrimp Cocktail ... a great appetizer recipe to try...a classic one !

Ingredients

* 1 ½ - 2 pounds of shrimp, cleaned
* 2 cups of warm water
* ½ cup of sugar
* ½ cup of kosher salt
* 2 cups of ice
* ¼ cup of olive oil
* Cajun seasoning (or Old Bay seasoning)

Instructions

1. Dissolve the sugar and salt in the warm water.
2. Add the ice.
3. Add the shrimp.
4. Let the shrimp marinate in the brine for a half hour.
5. Preheat your broiler with a cookie sheet in the broiler.
6. Take the shrimp out of the brine and rinse under cool water.
7. Dry the shrimp.
8. Toss the shrimp in the olive oil and sprinkle it with the Cajun seasoning.
9. Place the shrimp on the hot cookie sheet and broil for two minutes.
10. Turn the shrimp over and broil for two more minutes.
11. Place the shrimp on a cold cookie sheet or plate and refrigerate.

Ingredients for Oyster Cocktail I Recipe

* 8 small raw oysters
* 1 tablespoon tomato catsup
* ½ tablespoon vinegar or lemon juice
* 2 drops Tabasco
* Salt
* 1 teaspoon celery, finely chopped

Instructions

1. Mix all ingredients.
2. Chill thoroughly or overnight.
3. Serve in cocktail glasses, or cases made from hollowed green peppers placed on a bed of crushed ice. ..hmmm nice and tasty appetizer !

Ingredients

* 1 dozen chopped ripe olives
* 2 tablespoons chopped onion
* 2 teaspoons chopped parsley
* Sage or marjoram
* 1/3 cup milk
* 2 tablespoons brown flour
* Salt to taste
* 1 tablespoon vegetable butter

Instructions

1. Put butter, onion, parsley and savory into a small saucepan and simmer for a few moments.
2. Add the brown flour and the chopped olives and stir; then add the milk and make smooth.
3. Cut white bread into thin slices, trim off the crust, and spread lightly with vegetable butter.
4. Cover with a spread of the olive filling and lay another slice of bread over this.
5. Press together and cut into triangles.
6. Lay in an oiled baking pan, pour over it a thin cream-tomato sauce and let simmer in the oven until hot through, basting now and then with a spoon, and serve....nice and delicious ! Enjoy it for starters meals !

Celery Rolls Recipe

Ingredients

* 6 rolls
* 4 stalks of celery
* 1 teaspoon salt
* 1 teaspoon pepper
* 1 tablespoon grated onion
* 2 tablespoons tomato ketchup
* 4 tablespoons olive oil
* 1 teaspoon of lemon juice

Instructions

1. Cut out a silver-dollar sized piece from the top of each roll. Scoop out the inside of the roll.
2. Chop the celery very finely.
3. Mix together the celery, salt, pepper, grated onion, tomato ketchup, olive oil, and lemon juice. Refigerate.
4. Fill the rolls with the celery mixture and serve very cold.

Ingredients

* 2 cups cooked chicken
* 4 tablespoons chopped mushrooms
* 1 teaspoon salt
* ½ teaspoon pepper
* 1 teaspoon parsley
* ½ teaspoon onion juice
* 1 tablespoon lemon juice
* 2 tablespoons butter or other fat
* 1 tablespoon flour
* 1 cup milk or cream
* 4 eggs

Instructions

1. Mix the chicken, mushrooms, salt, pepper, parsley, onion and lemon juice.
2. Make a white sauce: combine butter, flour, and milk or cream in a saucepan over low heat. Cook, stirring constanly, until butter is melted.
3. Add the chicken and cook for three minutes.
4. Stir in two beaten eggs.
5. Take from the fire immediately, pour into a greased, flat dish and allow to cool for an hour. Note: The colder the mixture becomes, the easier it is to handle.
6. Shape into patties, and coat with fine crumbs.
7. Beat the other two eggs in a bowl or deep plate.
8. Dip the patties in the egg, then in crumbs, put them in a frying basket, not crowding them, and cook in hot oil for two minutes.
9. Optional: serve with Bechamel or mushroom sauce. ...hmmm what a nice taste of chicken croquettes.....enjoy !

Apple Roly Polies Recipe













Try this nice appetizer recipe....the Apple Roly Polies

Ingredients

* 6 baked apples, skin partly removed
* Pie crust or crust for meat pies
* Lemon or nutmeg sauce

Instructions

1. Roll the pie crust one-eighth inch thick; if using crust for meat pies, one-fourth inch thick.
2. Cut in eight-inch squares, put an apple on each, fold the crust, dust with granulated sugar and a little cinnamon, place in a pan oiled with corn oil and bake thirty minutes.
3. Serve hot with sauce....great appetizer to try 1
